LVM Thin Provisioning

First - I'm very green to Linux:

If I set my partitions to LVM Thin Provisioning on a all my partitions do I set the size to the maximum available space? Thus with the partitions automatically growing they would apportion themselves as needed until I need to increase the total available down the road? This is assuming that you can "double up" on the partition size.
