Overcloud minor update process

Hello,
i'm facing with openstack update process, in our cloud we have many VMs with CPU pinning and we would understand how "openstack overcloud update stack" will manage them.

In few words can we bypass automatic director orchestration and force director to update one specific overcloud node and manually move or shutdown VMs?
