Difference between 7Server and 7.x Repositories?

On Satellite 6.1, under Repositories, it is a slow process to synchronize repositories for a new organization. One question that comes to mind is how minimal a set of repositories could/should I set to sync? What is the difference between, for instance Red Hat Enterprise Linux 7 Server RPMs x86_64 7Server and Red Hat Enterprise Linux 7 Server RPMs x86_64 7.2 ?

If I need the X.Y type repositories, do I need to occasionally return to the Repositories menu and select new releases manually as they come out? Is there a way to script this?
