In RHEL5, the portmap service is used, which does not have support for IPv6.
In RHEL6, the rpcbind service is used, which does have support for IPv6.
IPv6 support for NFS was added to upstream Fedora in 2010, before the release of RHEL6, but several years after the release of RHEL5.
If you wish to use NFS over IPv6, please use Red Hat Enterprise Linux 6.

I have improved the above knowledgebase articles to better clarify support status and the reasons why.
