Can customized RHEL6 kickstart image be used on RHEL7 with minor mods?

Yes, there will be some minor differences in the package/group names etc. but overall it can remain the same. This is the process I use when moving to a new major version.

If you need an EL7 kickstart to work off, generate a new/fresh one using a standard install from media and move over your EL6 configuration.

Is the auto-generated kickstart file in /root/anaconda-ks.cfg a good place to start?

Absolutely.

Especially for things like partition configuration and base packages. I generally just do a minimal install from media with LVM configured to meet requirements then collect the kickstart from /root after install and work from there.

Network interface names are differently named in RHEL7 rather than conventional way of "ethx" as seen in 6. You may refer this discussion https://access.redhat.com/discussions/916973
