How can I keep my system at a particular level ?
Hi,
I want to keep my system at a particular level (for .e.g, say, RHEL 6.5). Doing "yum update" may update the system to the next level i.e. RHEL 6.6, which I don't want.
I want the system to pull up dates relatd to RHEL 6.5 and keep the system @RHEL 6.5 only.

So is that the recommended way to achieve what I want ?

Yes, if you want to only stay on RHEL 6.5 but still receive critical security and bug updates to 6.5, then EUS is the way.
Note that RHEL 6.5 EUS ends on Nov 30 2015 so 6.5 won't be receiving any further updates at all after that date.
EUS dates for each release are given on the product lifecycle page.
