How do I restore Evolution defaults if it is crashing every time on startup or while accessing a mail account?

Symptoms:
When you start Evolution, you get the "Fatal Error (Segmentation Fault) do you want to file a bug report?" window. If Evolution does start, you get this error while accessing specific mail accounts or settings.
