Improve logging collector regex to set log level of the logs more accurately

Issue

• Improve collector regex to set log level of the logs more accurately.
• Log collectors sets incorrect log level.
• Log collectors sets the log level to "DEBUG" if anywhere in the log "debug" is present, while the actual log level is "INFO".
• High volume of information logs highlighted as error logs in Observe > Logs section.
