Configure offset to kafka consumer

Issue

• We are facing issues to consume Kafka topic when we restart pod consumers. These are consuming since the first message and we'd like to configure application deployment to start from a specific number offset. How can we config this parameter in the deployment config or environment variable?
• Is a production environment. We are can not process new orders in our system. We have more than 1.000 orders stuck.
