SOA-P 5.x fails to start up with MySQL 5

Issue

I have followed the instructions from the ESB Administration Guide to switch the database to MySQL using the provided ant script. However, starting up the server fails with the following error:

ERROR [org.jboss.kernel.plugins.dependency.AbstractKernelController] (main) Error installing to Start: 
      name=jboss.esb:service=JUDDIDatabaseInitializer state=Create mode=Manual requiredState=Installed
      com.mysql.jdbc.exceptions.jdbc4.MySQLSyntaxErrorException: Specified key was too long; max key length is 1000 bytes

How can I fix or work around this?
