Setting Timezone And Character Escapes For Camel-Jackson JsonDataFormat

There is a camel route using camel-jetty based Rest web service which treats application/json.
How to specify timezone(ex. "America/New_York") or character escapes(ex. "\/") for camel-jackson jsonDataFormat?
