Using external SAN storage disks for OpenStack Swift is not directly supported by Red Hat

Updated -

By default OpenStack Swift will use local disks when deployed using director. It is recommended to use separate disks on the overcloud nodes for Swift if available to ensure performance and disk space requirements are met.

Another option is to use an external SAN to provide storage for Swift itself, but this needs to be evaluated on a per-case evaluation.
