Why is it that when I reach the Disk Druid section of the installation I do not see any drives listed?

This indicates that the installer does not have a suitable driver for your host adapter. In many cases (dependant on the host adapter) we provide driver disks to resolve this problem. Please see the following URL for the available driver disk images:
