Configurable options on Email Wiretap and Email Router

I have a use case to retrieve the contents of the message and save it as a .CSV file. I would like to customize the message, message body, and attachment name with a date.

I would like to use the build-in actions but it looks like the Email Wiretap and Email Router have hardcoded subject, and message body.

Are there any email actions that have those as configurable?
