Question regarding use of iSCSI storage

Implemented an all iSCSI storage solution in our enterprise. The storage presents to a RHEL 7.7 VM.

Built a set of multi-terabyte databases on the iSCSI storage using LVM (~30 storage devices presented), database is empty at this point awaiting data migration. All the mounted file-systems were entered into /etc/fstab using UUID information, ~32 mounted filesystems.

After the build was completed the server was rebooted and only some of the mounted filesystems were mounted after the reboot. It's like the system knows nothing about the other UUIDs and seems everything is lost.

What could have gone wrong here? Can someone offer anything to start looking at as far as troubleshooting goes?

I get that the device order may/will be different after rebooting but understood that using the UUIDs to mount each file-system was the solution to that problem but seems to not be.

Any advise appreciated.
