Partition too small for large hardware RAID

Running RHEL 7.7 on a Dell R740 server.

I have a 7 TB hardware RAID (Dell/Perc). I think my data volume (VLM) was setup when the system was installed, using GUI installer/anaconda. The partition (/dev/sdb1) is only 2TB, or there abouts. I know there's a partition limit.

I have grown vDisks before, enlarging the partition in fdisk and conducting an lvextend with a -r argument to expand the LV and FS. Works great, remove old partition, add new larger one, tag it 8e, and write it.

I'm not sure removing this parition and trying to create a larger one in fdisk will work with a 7TB disk RAID.

Question: What's the preferred way to expand this partition, LV and FS without loosing the data?

I know the best way is to backup this data and recreate the entire volume and using the entire 7 TB (there abouts).

We're on a project with "challenges" and limitations to be able to back up what data we do have on the usable 2TB.

System does not have internet access, but I do have a repo with the DVD's RPMs.
