You should enable all the repositories you wish to install software from. That way, all the software installed from those repositories can be updated simply by using "yum update" whenever you wish to do so.
Of course, if your RedHat account includes a lot of basic RHEL OS subscriptions and just a small number of extra-cost add-ons, you probably should enable the add-on repositories only on the hosts that actually need the add-on software. That way, there will be no risk of causing inconvenience to yourself by accidentally installing a RPM that requires a particular add-on (using up an add-on subscription) to a system that is not supposed to have it.
It will take time to learn "best practices" for anything, and some of those practices will likely be argued over between two admins. Everyone has learned over many years from trials and tribulations, mistakes and successes. Many times there are multiple great answers to the same problem, it just depends on the situation.
Sometimes, depending on the system, I disable all but the very essential repos. For example I may disable the "epel" repo if it is for a system that will eventually be out of my control or off my site. You don't need to have repos enabled to use them, it just saves LOTS of typing when running "yum" command.
Good luck. Keep good notes for yourself as you learn.
